What to cook for special dinner ?

My friend is having her boyfriend over for dinner tomorrow night (it was their 3 month today) and shes cooking him dinner. She has no idea what to cook though. He likes vegtables (NOT vegan though, still eats meat) and spearmint. I suggested baked vegtables but she dosent like that...Little Miss fussy. Anyway shes freaking out so any help she'll be grateful. If you dont know the recepie just the name of the dih will do. THANKS :)

Lemon/Rosemary roasted chicken, potatoes %26amp; veggies
Reply:She could cook lamb chops dressed with garlic and mint and served with couscous (grains cooked in broth).

Asparagus or broccoli would be good, too.
Reply:Peas with mint, lamb with mint. Any sort of potato dish with chicken or beef. I made Golden Parmesan Potatos the other day that were easy and so good. Mix 1 cup of white flour, 1 cup of parmesan cheese, salt %26amp; peper to taste, some paprika (optional) %26amp; 1 cup of plain bread crumbs. Take 4 baking potatoes and cut into wedges. Heat a stick of butter and pour it into an oven proof baking dish. Moisten the potato wedges with water and dredge the wedges in the parmesan, flour mixture. Place the wedges skin side down in the buttered baking dish. Place in a pre-heated 400 degree oven. After 15 minutes turn the potatoes to one side to brown. After another 15 minutes turn and brown the other side. A great dish to make when you are doing other things in the kitchen so you don't forget to turn them. Green salad or other colorful veggie with a nice dessert to round out the meal.
Reply:For a special romantic dinner it is nice to cook foods that you can feed each other - shrimp cocktail, chocolate fondue, etc. Since he like veggies, I would suggest bagna cauda, hummus and crostini, stuffed mushrooms, and definitley chocolate!
Reply:Try chicken fried steak, with cream gravy, mashed potatoes, and greens...peach dumplings with vanilla ice cream for dessert (oh, and a salad wouldn't hurt things).

BROILED FILLETS OF SALMON WITH GINGER CREAM

The broiled salmon fillets are served with a creamy and tangy ginger sauce. Salmon steaks can also be used with this recipe.



Serves 2



2 6-ounces salmon fillets, with the skin

1 tsp vegetable oil

to taste, salt, ground black pepper

1 cups fish stock

1/4 cup dry white wine

1 tablespoons shallots, chopped

1/4 cup heavy cream

2 tsp fresh ginger, grated

1 ounce butter

2 tsp fresh ginger, peeled cut into fine strips

2 tsp fresh chives, cut into 1/2-inch sticks

1/2 teaspoon paprika





For the sauce:

In a large saucepan, combine the fish stock, white wine, and shallots. Bring to a boil and reduce the liquid by half. Add the heavy cream and the grated ginger. Bring the liquid back to a boil. Continue to reduce by half or until lightly thickened.

Strain the sauce through a fine strainer. Whisk in the butter, a few bits at the time. Set the sauce aside, and keep in a warm place.

Preheat the broiler. Wash the salmon fillets in cold water. Pat dry. Arrange side by side skin side up in an oiled oven-proof dish. Season with salt and pepper. Place the salmon under the broiler, 4 inches from the source of heat.

Broil for 10 to 12 minutes until the skin is crisp and the flesh is opaque.



Cover the bottom of hot plates with some of the hot ginger sauce. Arrange a piece of salmon in the center of each plate. Sprinkle the salmon with strips of ginger and chives. Pour remaining sauce over the fish. Dust with paprika. Serve hot.
